Bistro du Vin
Under the tutelage of head chef, Matt Powell, Bistro du Vin is at the heart of the hotel. A classic, French-styled, elegant and informal setting for lunch & dinner, or simply to meet, celebrate & pass the time. The Bistro uses only the finest produce of the Lothian region. Famous local suppliers include D.R. Collin Fish, The Mellis Cheesemongers and the 'birth to butcher reared' lamb and pork of Peelham Farm. These are but a handful of the many legendary suppliers the hotel is honoured to include within their 'Homegrown & Local' philosophy.
Add to this, the extensive and eclectic wine list, and an impressive array of wines by the glass brought to you by Head sommelier, Romain Auderie. Romain and his team are always on hand to help with any queries guests may have.
About Edinburgh City
Edinburgh knows how to welcome travelers with grace and charm. She also knows how to kick up her heels and enjoy a nice shot of Scotch Whisky after a festival. The hill that Edinburgh Castle stands upon has been Scotland’s remarkable silent witness since the Bronze Age.
Today her streets are filled with cutting-edge galleries and museums, tributes to the love of literature and music, fine cuisine, quirky shops, theater, and an extravagance of festivals. Four ancient streets, called the Royal Mile, are the main thoroughfare. Running through medieval Edinburgh with her 66 alleys, tumbling shops, cobblestones, and tight homes the Royal Mile takes you to New Town. Here you’ll stroll through fine gardens, perfect Georgian architecture and broad squares.
The mix of time, while lost in time, is a heady brew. There may be no finer city than Edinburgh Scotland, to participate in the gifts of the past with an eye to a brilliant future.
