The gardens at Cashel House Hotel are a place of profound beauty, a place of meditation and relaxation, which benefit from the warmth of the gulf stream. Blossoms galore welcome spring in all its glory! Take a guided tour, or potter at your leisure. Benches are located throughout the garden for a rest and reflection. Withdrawn and quietly secluded, the gardens are a delight with their enchanting cultivations of exotic and exquisite flowering shrubs - many imported from Tibet - including rhododendrons, azaleas, camellias and the rare beautiful magnolias. Lists of rare trees are available at reception.
Connemara`s hundreds of lakes, rivers and mountain land, as well as the island studded Cashel Bay combine to provide the choicest food - fresh lobsters, mussels, clams, scallops, salmon, mackerel, brill, turbot and trout. Choice meats and Poultry also feature on the hotels menu - Connemara Lamb, Irish Beef, Venison, Quail and Guinea Fowl complimented by a wide variety of fresh vegetables from the organic gardens. These are then carefully cooked under the supervision of the hotels skilled team of Chefs and served in the welcoming dining room by Ray Doorley and his efficient, personable team. Cashel House's wine list is extensive and provides the perfect accompaniment.
A Large Conservatory extension enhances a well-appointed split-level dining room, which is overseen by members of the McEvilly family. You can choose to dine in the Airy, Bright conservatory or in the Original Dining Room Section, with its antique tables and numerous Original works of Art, while enjoying perhaps a Warm Parcel of Quail and Duck with a Delicate Brandy sauce or A Warm Avocado with Tomato, Mozzarella and Red Onion accompanied by a Green Leaf Salad. Then moving on to A Plum Tomato Soup spiked with Basil or a Delicate Game Consomme, followed by a refreshing Sorbet.
For a Main Course you may choose a Roast Loin of Connemara Spring Lamb Glazed with Honey and Mustard accompanied with a Rosemary and Apricot sauce or A Tasting Plate of Fresh Local Seafood accompanied by two sauces ~ Chilli and Saffron.
